Chicken or Chicken?

 Chicken or Chicken?

Chicken is a home cook’s weeknight best friend. You can cook it any way you like such as grilled, fried, roasted, baked, braised, etc. and it’s the star ingredient in all kinds of cuisines from across the country and around the world. (There’s a reason we have thousands of chicken recipes on our family of sites!) For many home cooks (myself included), we’ve fallen into a routine of cooking the same chicken recipes week to week. Chicken sometimes feels more like an obligation to cook, rather than something you are excited to eat.

Americas’ Test Kitchen can help! If you’re looking to freshen up your chicken recipe repertoire, The Chicken Bible offers 570+ foolproof chicken recipes (for all cuisine types!) that showcase the exciting versatility of chicken dishes. And if that’s not enough to be excited about, consider the fact that 180+ of the recipes can be prepared in 45 minutes or less!

We give you everything you need to prepare flawless chicken and turkey meals with practical resources such as our step-by-step technique tutorials, food safety information, seasoning tips and tricks, winning brand recommendations, and more. We’ve conveniently organized the chapters based on the cooking method or type of meal you have in mind such as easy dinners; roasts; braises; simple sautés and stir-fries; breaded and fried; pastas and noodles; and more. Each recipe includes the total cooking time so that you can plan meals accordingly.

One of my favorite features of the book is the chicken and turkey parts chart. This detailed chart with photographs breaks down the various cuts and gives you helpful information on the best ways to cook them. You’ll also find dedicated chapters to cooking chicken with popular appliances such as Instant Pot, sous vide, and air fryer. Need small-batch recipes? You’ll enjoy a whole “Cooking for Two” chapter as well.

Whether you’re new to cooking or an experienced home cook, this book gives you everything you need to prepare delicious chicken and turkey meals 365 days of the year. Your days of poring over chicken recipes online to find what you’re looking for are over. These flavorful recipes are guaranteed to work every time. You’ll never question what to do with a chicken breast, wing, thigh, drumstick, leg, or cutlet again!

Herbed Roasted Chicken

This fresh and flavorful recipe gets its vibrant flavor from our buttery herb paste made with scallions, tarragon, thyme, and spices. We butterflied the chicken and then spread the paste underneath the skin to achieve a crispy exterior. To ensure that the chicken would keep its fresh herb flavor, we slathered the paste over the top of the chicken halfway through cooking.

Turkey Cutlets with Barley and Swiss Chard

For a hearty weeknight meal (and a break from chicken), we recommend quick-cooking turkey cutlets. Because turkey cutlets cook quickly, we prepared our barley and Swiss chard first. We cooked the barley with onion and garlic and then added in the Swiss chard. To give the cutlets a bright, citrusy flavor that wasn’t too overpowering, we caramelized lemon and squeezed the mixture over the top of the cooked chicken.

Cast Iron Easier Fried Chicken

You’ll find plenty of fried chicken recipes in our cookbook, but this one is your new go-to if you’re looking for a fuss-free cast-iron version. We brined the chicken in buttermilk for about 30 minutes to prevent it from drying out while cooking. To achieve a perfectly crispy, crunchy coating, we whisked our dry ingredients and spices with buttermilk and dredged the chicken pieces in the mixture before shallow-frying them in our pan. We then cooked the chicken in the oven for about 12 minutes.
